Grapes are harvested by hand in the coolest hours of the morning, pressed in de-stemmer and trasferred in truncated thermoconditioned French oaks. After starting fermentation, the temperature rises gradually to a maximum of 28° C.
Maceration on takes about 14 days, with daily operations of short pumping over and rack and return.
Takes place the malolactic fermentation for each type of grapes in separated cement tanks.
At the end of fermentation wines are transferred again in truncated French oaks for the aging for 8 months. The blending and stabilizaton operations follow, with bottling during summer.
Color is an intense red with brilliant purple reflections. Fresh, fruity, very clean smell, with notes of ripe red fruits, rasberry, black currant and plum and delicate spicy flavors of black pepper and licorice. Full flavor and round tannins give drinkability and good persistence.
About 16° C, In medium-width glasses.
Ideal for landfood appetizer, first pasta dishes and grilled red meat.
