Grapes are selected in vineyard and harvested by hand in the coolest hours of the morning, pressed in destemmer and trasferred in thermoconditioned vinification tanks in cement.
After starting fermentation, the temperature rises gradually to a maximum of 30° C to end fermentation stadium. The maceration takes abnin i8 days, with daily operations of pumping over and rack and return, alternating according to the taste and the interpretation of the enologist. Takes place the malolactu fes mentation for each type of grapes in separated cement tanks. At the end of fermentation wines are transferred in 225 Lt barrels of fine French new oak barriques, for the aging of about 18 months.
The blending and stabilizaton operations follow, with bottling during summer.
The color is very intense red purple with violet reflections. Intensity notes, with strong fruity and elegant smells of eucalyptus, licorice and vanilla.
Important texture, vivacity great taste-olfactory persistence make it a generous wine with very high aging potential in bottle.
About 17° C, In large-width glasses.
Ideal with important meat dishes of Tuscan tradition or as a meditation wine.
