Girapes are selected in vineyard and harvested by hand in the coolest hours of the morning, pressed in destemmer and trasferred in thermoconditioned tanks in cement. After starting fermentation, thè temperature rises gradually to maximun of 30° C.
Maceration takes about 20 days, with daily operations of short pumping over and rack and return.
Takes piace the malolactic fermentation for each type of grapes in separated cement tanks.
At the end of fermentation wines are transferred in 225 Lt - barrels on fine French oak barriques, for one third new barriques, for two third in barriques of 2nd reuse.
Aging lasts 16 months; the blending and stabilizaton operations follow, with bottling during summer of the second year after harvest.
Color is an intense redwith brilliantviolet reflections. A smell of great complexity, rich in nuances, with strong hints of mature marasca fruit, elegant balsamic notes, sweet spices such as vanilla and black chocolate. Deep and well-balanced tannins give gharminy and persistenceto to wine, as well as a longa aging in bottles.
About 18° C, In medium-width glasses.
Ideal with wild game and delicious red meat meais, or as meals, or meditation wine.
