Grapes are harvested by hand in the coolest hours of the morning and cooled immediately with dry ice up to 4 ° C.
They're carried to the press wthere they stay for 12 hours during cryomaceration. The obtained must isleft 72 hours at 3° C for decantation; then it's transfered and cleaned by lees.
The fermentation take place at a controlled temperature of 17 ° C. Then the wine is stored on less for 3 months to 10° C avoiding malolactic fermentation. Stabilization and bottling operations are made after about 5 months from harvest to exalt fragrance notes and the varietal charater.
Vintage 2016 is characterized by aromatic explosivity, concentration and taste intensity.
Brilliant straw yellow with greenish reflections. Nose with varietal fruity notes as grapefruit and tropical fruit, papaya and ripe pineapple. Light notes of officinal herbs, sage and thyme, intense mineral character in depth.
On palate it's evident the exuberant freshness balanced by the roundness of the flavor with a marked minerality typical of the Mediterranean territories.
Not less than 10°C.
Ideal as an aperitif and paired with all fish and seafood dishes, even the most elaborate and rich in flavor; white meats, appetizers prepared with vegetable's.
